    Duties Summary

    The full time permanent Cook serves at the VA Black Hills Healthcare System in the Nutrition and Food Service Line located in Hot Springs, SD.


    Major duties include, but are not limited to:
    Preparing and cooking a wide variety of menu items including regular and modified entrees. The incumbent may also be required to prepare an entire meal.
    Independently obtaining production reports, recipes, diet census, lodge lists, etc., in computer in order to procure accurate amounts of planned menu items, for each diet regular and modified.
    Testing and evaluating new food products and develops/modifies standardized recipes.
    Working independently or under guidance of Cook Foreman or Administrative Dietitian and coordinating cooking of items prepared by lower graded personnel.
    Keeping work area clean and orderly.
    Analyzing and correcting production problems independently, and coordinating the cooking process for food items assigned directly to them.
    Preparing meals to coincide with patient's needs, schedules, and nursing service.
    Calculating and determining portion servings from quantities of food issues such as roasts.
    Preparing food using good food handling techniques.
    Providing assistance in ordering food in accordance with daily and weekly menu requirements.
    Maintaining schedule for rotation of food inventories to prevent spoilage.
    Work Schedule: Rotating schedule with rotating days off; shifts 5:30am-2pm;10:30am-7:00pm must work scheduled holidays and weekends.

    Physical Requirements: Moderate Lifting, Moderate Carrying, Straight pulling, pushing, Reaching above shoulder, Use of fingers, walking, standing, repeated bending, climbing, Ability for rapid mental and muscular coordination simultaneously, Near vision correctable at 13" to 16" to Jaeger 1 to 4, Far vision correctable in one eye to 20/50 and to 20/100 in the other, ability to distinguish shades of colors, and hearing (aid permitted). Incumbent is exposed to extreme temperatures, cold from walk in freezers and walk in refrigerators and hot from ovens; steam; loud noises from equipment; and strong cooking odors. Incumbent works with equipment having sharp blades, motorized parts, and removable parts, which could possible subject, the incumbent to cuts. Incumbent works with equipment that produces steam, hot surfaces, and hot liquids, which could possible subject, the incumbent to burns. Also work in an area that may produce wet floors and slippery floors.

    Note: A full year of work is considered to be 35-40 hours of work per week. Part-time experience will be credited on the basis of time actually spent in appropriate activities. Applicants wishing to receive credit for such experience must indicate clearly the nature of their duties and responsibilities in each position and the number of hours a week spent in such employment.
